My Favorite Hummus Recipe


What I love most about summer is going to all the farmer's markets to buy fresh fruits and veggies.  Since I don't have any space for my own garden this is a weekly trip that I really look forward to.  I love fresh corn, zucchini, green beans and summer squash but my most favorite thing to buy is nice big juicy red tomatoes.  Don't even get me started on heirlooms, because if one of the stands has them that's what's coming home with me.

Of course fresh picked tomatoes are fabulous on sandwiches and salads but what I really like to do is make a big batch of my homemade hummus, chop up a tomato and get to dipping.  This is my favorite summertime lunch paired with a slice of crusty bread, delish!  Now I like my hummus spicy so this one is loaded with chili and pepper flavor and a LOT of garlic.  I'm not a big fan of  lemon juice so just use a splash of it.  I also like it a little on the thin side (compared to what you buy in the store) which makes it better for dipping.  Whip it all up in the trusty Vitamix and yum, I'm happy. 

CHILI-CHIPOTLE HUMMUS 

2 cans chickpeas (15 oz, drained)
1/2 cup + 1 T tahini
3/4 cup cold water
1 tsp lemon juice
2 T minced wet garlic from jar
1 tsp chili powder
1 tsp cumin
1 tsp smoked paprika
1/4 tsp ground chipotle spice
2 T olive oil
3/4 tsp salt

If you've only ever eaten hummus with pita chips you're missing out, believe me.  Tomatoes, carrots, celery are a few of my faves.  As they say, whatever floats your boat.
