What I love most about summer is going to all the farmer's markets to buy fresh fruits and veggies. Since I don't have any space for my own garden this is a weekly trip that I really look forward to. I love fresh corn, zucchini, green beans and summer squash but my most favorite thing to buy is nice big juicy red tomatoes. Don't even get me started on heirlooms, because if one of the stands has them that's what's coming home with me.

Of course fresh picked tomatoes are fabulous on sandwiches and salads but what I really like to do is make a big batch of my homemade hummus, chop up a tomato and get to dipping. This is my favorite summertime lunch paired with a slice of crusty bread, delish! Now I like my hummus spicy so this one is loaded with chili and pepper flavor and a LOT of garlic. I'm not a big fan of lemon juice so just use a splash of it. I also like it a little on the thin side (compared to what you buy in the store) which makes it better for dipping. Whip it all up in the trusty Vitamix and yum, I'm happy.

If you've only ever eaten hummus with pita chips you're missing out, believe me. Tomatoes, carrots, celery are a few of my faves. As they say, whatever floats your boat.
This was once my all-consuming hobby (before photography) and I did pretty well as a seller. I started doing paint and fabric crafts in 1992 and eventually branched out to almost exclusively silk flowers, wreaths especially. Sold a tremendous amount of stuff at work, some local consignment shops and craft shows. Sometimes I don't know how I did this working full-time but somehow I did it anyway.

After selling my own handmade stuff on eBay for a while, I started selling a lot of "shabby chic" decorating items. Around 2006, pink was a hot seller and I sold tons of pink items - sheets, towels, plates, teapots, you name it. This is where I also first got the photography bug as I learned how to stage little "vignettes" to showcase my items with my trusty Olympus P&S. I also became interested in html, working and re-working my purchased templates.

Around late 2008 it started costing me too much to sell on eBay because people had stopped buying due to the economy. I still have a huge amount of silk flowers, paints, fabrics, plus shipping boxes, bubble wrap and tape. Today I decided to look up my favorite sellers list on eBay, which I haven't even looked at for about two years and almost everyone has nothing for sale. Probably have all gone to Etsy or like me, gave it up. Although I did find one seller and she is still going at it. Put a little spark in my brain!

I'm still registered with the State as a business. Could it possibly happen? I'm going to look more into this, my interest is piqued!
The building has large doors on each end that slide open automatically and open into a long lobby. I walked into the building and immediately something came flying at me with a "swoosh". I ducked and then saw several other people duck and saw the small bird flying around in a panic. There are always a lot of birds outside as there are trees and bushes and he must have gotten in when the large doors opened and couldn't find his way out.

The lobby was full of people and everyone was trying to stay out of his way when he flew behind an artificial plant there in the lobby by some chairs right where I was standing. A lady and I parted the plant and saw him there and then he took off again. I wanted to get to the lobby doors to open them and started walking toward them when the little guy flew right into the glass and fell to the ground. People all gathered around him asking if he was OK and it seemed like no one knew what to do. I heard people say not to touch him but I couldn't just leave him there. I threw my purse on the ground and got out a tissue and gently picked him up. He was a pretty little thing with a yellow breast. His wings appeared to be OK because nothing was at a weird angle but he wasn't moving.

So I picked him up and gently carried him outside and laid him on the ground just inside a large bush. A young girl followed me out and she wanted to prod him with a piece of mulch, but I asked her please not to touch him. When I went back into the lobby people were all asking me if he was alright. I told them that hopefully he was just knocked out and would wake up in a while, it seemed to make them feel better.

When I came out of the doctor's office about 45 minutes later, I checked on him and he was still laying there. I still have hopes he will wake up. Should I have done more? I don't know. Been feeling sad all morning now. I've been waiting all year for this and I've been so busy I've hardly had to chance. It was a lot of fun going to buy a pumpkin out at Spring Farm. Had a warm apple sundae too, sooo good! Forget the calories! I love seeing all the pumpkins for sale and trying to pick out the perfect one. Best to do this on Friday too, because it gets mobbed on Saturday. So here are a few photos to enter the "nurture photography" photo contest with this week's theme, Orange/Warmth.

It's early morning as I light the Glade candle on my computer desk. It
has previously burned halfway down and the flame flickers inside the
milky glass, not quite reaching the top. The scent is apple cinnamon and
that wonderful sweet smell suddenly transports me in my mind to a large
apple orchard nearby. How I would love to be there right now picking
apples in the cool autumn air. My favorite season! A kaleidoscope of
colors on the trees gently falling to the ground, hot apple cider and
chilly nights. Thinking of fall reminds me that I have to buy a gift for
Mom's birthday in a few days. The apple scent reminds me there's
grocery shopping to be done and the sooty match is telling me there is a
ton of housework waiting. Suddenly those blissful thoughts of apple
gathering are gone and reality jolts me back to the present. So goodbye
for now my lovely fruity friend, and perhaps we can meet again when the
busy day is through.Unknownnoreply@blogger.com1tag:blogger.com,1999:blog-2031920171998627056.post-29401579570349016152012-09-23T08:39:00.000-04:002015-10-01T22:45:00.863-04:00It's Not Too LateThis post may be therapeutic in a sense as I feel I have to put some thoughts down on paper (so to speak) about disappointments in my life and trying to overcome them. When I was a young teenager and thinking about what I wanted to do with the rest of my life I had some big ideas as most kids do. In the mid to late 60's a large majority of women did not go to college. They finished high school, got married and had children, and that was a decision that many women made. A lot of women who did work had part-time low paying jobs at the local grocery or drug stores. But it was also the beginning of the so called "women's liberation" movement when women were exploring beyond traditional roles and finding out they could survive and thrive in corporate worlds and actually make a living doing so, becoming independent and looking at marriage as a choice and not a necessity. I really didn't know what I wanted yet, but even at a young age I knew I didn't want to be a housewife and I admired women who had goals beyond the home and wanted a career. Continuing your education after high school was the first step to getting there.

In those mid 60's years, I started to dream about going to college. As I always loved English and taking photos, I would daydream about what it would be like to be a photojournalist. I loved looking through Life magazine and thinking how great it would be to travel the world reporting and bringing the news to life with pictures. Things were a little different back then and student loans really weren't something that was available. Most kids who went to college worked part-time jobs while their parents paid the majority of the bills because they had saved up for years so their kids would be the first in their family to get a degree. Many parents re-mortgaged their homes in order to obtain college money for their kids. My step-dad would never, never, ever approve any loans being taken out in my parents' names or mine. I was told there was no college money for me and since my older sister had taken some secretarial classes in school, Mom advised me to go that path also as I could get a respectable job with those skills and if I wanted to take some college courses later I could pay for them myself.

So I took what was called the "secretarial course" in high school which included typing, shorthand, bookkeeping, key-punch operating and very little math, no language or science and a very limited choice of electives. In hind-sight, this was a really bad path to take as far as getting a decent education as all I really learned was how to do manual labor in a sense. However, I actually did enjoy my secretarial classes and even got to take the civil service exam in the high school cafeteria and got a fairly high score on it. When I graduated I got a letter from from the Federal Government to come in for an interview and at that time wasn't at all sure what I wanted to do or where I wanted to work but Mom told me I had to make a decision so I went for the interview and, as they say, the rest is history. I started my job with the Federal Government in September 1970 at the tender age of 17 as a clerk/stenographer and proceeded on a 40-year career for which I am very grateful. So, the deficient secretarial course got me in the door of the Federal Government and from there it was up to me to decide how ambitious I wanted to be. With all the opportunities for training that the government offers for a wide variety of jobs it is really one's ambition or lack thereof that determines how far one can go. After spending 12 years as a secretary, I branched out to being a claims examiner, a job which I really enjoyed, and after 40 years was able to retire happily in 2010 at the age of 58 with an annuity I can live on and have enough money to travel and pursue my hobbies. Not bad.

So you'd think that my "sadly lacking education" should be long forgotten, however, it is such a part of me that it's hard to forget. In my early 20's and not long out of high school, I decided to read a lot of the "classic" novels like the Ernest Hemingways and John Steinbecks and Faulkner and F. Scott Fitzgerald and after that Tom Clancy and Michael Crichton novels and mysteries and spy novels about World War II and the Cold War and on and on. Since I had never even studied World History in school, these novels amazed me with their wealth of information about things way beyond my little scope of knowledge. (Who could not love A Farewell to Arms or For Whom the Bell Tolls or East of Eden?) I have always been an avid reader which is what keeps my interest in learning going. I started learning things that I had not learned in school through reading and educating myself. I've even learned how an autopsy is performed, thanks to Patricia Cornwell (although math still lags way behind, LOL).

During my early working years, I had a feeling a low self esteem which had persisted since high school. However, as I spent more time around fellow workers, I realized I really was not a "dummy." A little encouragement from different people in both my work and personal life helped move me along to having a much better opinion of myself and what I thought I could accomplish. In those 40+ years since high school, what I have accomplished is "self-education" through reading, continuing education courses and just life in general. Somewhere along the road, I could have decided to go to college and pursue that dream of a degree (and I much admire people who do this while holding down a full-time job) but life got in the way and it didn't happen.

My little blog has become my place to journal and post photos so I am finally fulfilling my teenage dream. Perhaps in a much smaller way than what could have been but at this point in my life, it's something that makes me happy. I am learning all I can about photography and plan on taking continuing education courses to help me become a better writer. If I had not taken the lousy secretarial course I would not have gotten my government job. If I had not gotten my government job and remained there for 40 years, I most likely would not have been able to retire at the young age that I did (as far as retirements go) and be able to do what I am doing now. As far as some great moral of the story, I really don't know what that would be except that you have to do for yourself, no one else is going to do it for you. If there is something that you want, you have try to go for it. If you want to "have it all" then that is what you should do.

I never had "it all" but I do feel what I have had has been pretty good and hopefully will keep on being that way. I gave up my dream of going to college but not about my own continuing education - I never want to stop learning.Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-2031920171998627056.post-91902541557261523282012-07-25T23:30:00.009-04:002015-10-01T22:45:41.721-04:00Diners, Drive-ins and Dinner

A few weeks ago I was watching reruns of Diners, Drive-ins and Dives with that slightly wacky but always entertaining Food Network star Guy Fieri. Back in 2008, he and his pretty red camaro went to a place known for their seafood specialties (Baltimorons call this a crab joint) not far from where I live called the Stoney Creek Inn. Well, I figured if this place was good enough to be on Guy's TV show, it had to be something special so one recent evening a friend and I decided to try it. Puzzled as to how I had missed this when it first came on as I watch it a lot.

From the outside, this place definitely fits into the dive category. It sits off the main road right next to a marina on Stoney Creek, not far from the Chesapeake Bay. Looks like a little dumpy bar with neon beer signs in the window and at first glance, really not much better on the inside. It was pretty small and where they seated us obviously used to be some kind of porch, now closed in with cinder block and formstone on the walls. But, after looking around, even though it was small it was clean and homey looking. They had a large outside area with picnic tables that is probably used for steamed crab eating that had a nice view of the marina.

We had a wonderful appetizer called shrimp and crab toast, which was lump crab and shrimp on a sub roll with cheddar cheese on top. Then I had a crab cake, baked potato and corn on the cob. Great crab cake, nicely seasoned and big pieces of lump crab. It was an excellent dinner, a little expensive, but seafood always is and it was large enough to bring home some leftovers. Wish I had room for dessert because they had some homemade ice cream on the menu that really sounded good. So I have to agree with Guy, what might look like a dive on the outside could really be quite the gem. You just have to go in and find out for yourself.
So on July 5 I finally visited after trying once a few years ago and being turned away because we had no reservation. It appears at that time we got bad information at the gate because for $8.00 and no reservation you can do a self-guided grounds tour. You can actually walk right up to the house, you just can't go in! Wish I had known this 4 years ago. I really would like to go back someday and see the inside of the house. I think this would probably have to be in the Fall because as spectacular as it looked in summer, I can imagine that seeing it in the Fall would be awesome.
On my recent vacation to Deep Creek Lake, I found this lovely little bakery named the Mountain Flour Baking Co. in the town of Accident, Maryland. Accident is a small town in Garrett County which, according to Wikipedia, has a population of 353 as of the 2000 census. Wiki also says that residents of the town are called "Accidentals" which I didn't know. I have traveled through this town many times as a kid visiting my Mom's hometown of Kitzmiller and it's name always made me giggle but I knew when we got to Accident we weren't far from Grandma's.

Anyway, back to the bakery. I stopped by this place because I had a craving for some sweets. You definitely can't miss it since it is right on Main Street, has a large "OPEN" sign and is flying a large flag outside. So everytime we drove up Rt 219 going somewhere we would pass it and my cravings were getting stronger each time.

The bakery is small inside but offered some large temptations. I pulled out my camera and began to photograph some yummy looking cookies. People look at me funny sometimes, but hey, I take my camera everywhere especially when there is food involved. I was greeted by a nice lady behind the counter named Bird. She told me the bakery is under new ownership and gave me a flyer with all their items on it. I was quite surprised to find out that they even have artisan breads which are right up my alley but I never expected to find this far west of Whole Foods or Wegmans territory. They offer a ton of different cakes, cupcakes, brownies, bagels, donuts, cheesecakes, bread pudding and much more, Oh My! She even brought out a fabulous fresh-baked cherry pie while I was there which looked so heavenly. Their website also says that they feature beautiful wedding cakes made by owner Christine Cornish Lewis.

I tried a few things, one of which was this fantastic peanut butter ball covered in chocolate (better than Reese's), some nice soft chewy chocolate chip cookies and snickerdoodles and an apple fritter so good like the ones at the Amish farmers markets in Lancaster PA. I was there a little late in the day and sadly the cupcakes and a lot of the pastries were almost sold out and I do regret that I didn't have a chance to stop there again before leaving Deep Creek.

I wish the Mountain Flour Baking Co. a whole lot of success with their business because I sure do want to stop in there again and try some of those cupcakes that I missed and get a big box of those peanut butter balls to take home because I haven't seen anything like them around Baltimore. Keep up the great baking and I will see you on my next trip to the mountains!
Hanover PA is only about 30 miles away and is the home of the Utz potato chip factory. I would have loved to have taken a tour of the factory, but that will have to be another trip with more time to spend. Yesterday was mainly a shopping trip to the Utz Outlet Store to stock up on snacks. Utz makes the best chips (in my opinion!) and has a variety of multi-flavored potato chips, cheese curls, tortilla chips and a large selection of pretzels at the outlet for prices much lower than grocery stores. They also have chocolate covered pretzels and chips. Sorry, I am not quite that adventurous to try a chocolate covered potato chip. Ended up spending about $30 and have enough snacks to last about 6 months. And just when I thought I would get back on my diet!
I bought my Nikon DSLR a few months before I retired (and while I still had overtime). One of my retirement goals to learn all that I could about digital photography and post processing. Now, I have been "into" photography for most of my life, starting with my Kodak Brownie camera when I was about 10 and still own two Nikon film cameras but digital is a fabulous new ballgame. Wow, remember the days when you didn't know what was on your roll until you got it developed? I would send my film away in the mail to be developed and then tear open the package excitedly when it arrived just to be disappointed in how the photos turned out. I used to say that I could take 50 pictures and maybe get one good one! No more, LOL. If it sucks, it can be deleted immediately.

I bought my first digital point and shoot in 2005. Bought a better one in 2008 and learned a lot with those two. I took a nature photography class from a local college in 2009 which really made me realize that I wanted a DSLR. When I look back on those photos, which I thought were really good at the time, I feel I have come a long way.

I have been submitting my photos to various internet photography sites that run weekly and monthly contests. I have gotten some feedback but no wins until now. Last week I submitted a photo to DSLR.com and won! No prize, but at least for this week I have "bragging rights." This was one of my favorite photos from 2011 and I am very happy that it won.

See link below for my winning photo!Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-2031920171998627056.post-75528314970038578872012-01-11T15:08:00.008-05:002015-10-01T22:47:27.330-04:00Whole Foods and DoctorsThis morning was one of those mornings that I have not had a lot of since I retired. UGH, I had to set the alarm clock. I had an appointment with my rheumatologist at 9am which, believe me, is extremely early these days. I used to get up at 5am and be at work by 7am but I'm sadly out of practice. I also can never estimate how long it's going to take me to get there and I end up rushing like a crazy person and there's always too much traffic. But anyway, I made it, and all is well for another 3 months.

I got out of there in about an hour and since I was near Mt. Washington, which is a really cool little area, decided to drive over there and see what was happening since I haven't been there in a while. It's part of Baltimore City but you would never know it by it's quaint and quiet tree-lined streets. One of my favorite restaurants, the Mt. Washington Tavern, was there until a few months ago when it burned down. I drove by and it looks like they are busy getting it rebuilt. The front windows are boarded up with two huge Ravens banners draped across them.

Mt. Washington is also the home of a Whole Foods store, which I have wanted to go to forever, and have just never had the chance. I love "hoity-toity" food stores, and believe me, this has to be one of the "hoitiest and toitiest" I have ever been in. Not like Wegmans, which has all the gourmet stuff on one side and pretty much a regular food store on the other. Well, only if regular food stores sell books, cookware, appliances, etc. Whole Foods specializes in organic foods and they have an abundance of fresh fruits and vegetables. The fresh meats and fish looked really good and they also have a great bakery. I love all those chewy, crusty loaves of multi-grain bread so I definitely got one of those and a large slice of gingerbread. My favorite thing though, was the hot breakfast bar. Scrambled eggs, sausage, potatoes with onions, Oh my, I had to get some of this to take home and it was wonderful. So by the time my next doctor appointment comes around in 3 months it will be April and Spring will be on its way, I will have to take my camera and visit Mt. Washington again and take a few shots. It's something to look forward to than just talking about my aches and pains.Unknownnoreply@blogger.com1tag:blogger.com,1999:blog-2031920171998627056.post-14853362170337399942012-01-02T17:40:00.002-05:002015-10-01T22:47:37.805-04:00I Heart Faces Photo Challenge - Silly Holiday PhotosSilly photos show up when you least expect them to. When I'm looking through my memory card after a get-together with my family, sometimes I find some funny photo that I don't remember even taking. The best ones are usually from when I give my camera to Haley, my 15-year old niece, because I never know what she will come up with. She loves playing with the Nikon, and I can sit and talk to my sisters and brothers and she photographs the entire event. I really think the kid has the potential to be a good photographer.
So this particular one I can't take credit for as it's one of Haley's. My sister Lisa (Haley's mom) and her friend Bryan were posing on the stairs and my crazy sister Beth jumps out behind them. I laugh every time I look at it. I know my sisters will be thrilled to find out this photo is my entry for the I Heart Faces Silly Holiday Photos, yeah, right!
I used to take off work early sometimes to clean the house because I hated when things weren't done. So why is it now that I have lots of time to do these things they aren't done? I no longer feel the need to fold clothes, dust furniture or wash dishes just because those are the jobs that are waiting for me. It seems now I am more interested in editing photos or catching up on my favorite TV shows. On one hand, I feel like I should be doing housework and on the other, I think - what the heck I can do it tomorrow. Ah, the life of the retired. Do I really care? I don't know. Maybe I do, I need to get off of the computer and go clean the bathroom.Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-2031920171998627056.post-79760499193716476552011-12-05T22:12:00.002-05:002015-10-01T22:48:09.915-04:00Ocean City in the OffseasonLast weekend I went to Ocean City MD for the big crafts fair they have there every year the weekend after Thanksgiving. I suppose some people wouldn't even think of going to an ocean resort town in the offseason, but for me it's my favorite time to go. I've never been a sunbather and I can't stand waiting in the lines for two hours in the hot sun trying to get into some restaurant in the middle of July. In the offseason, most of the places are open on the weekends. There are plenty of places open on the boardwalk and you have your choice of restaurants without the summer lines. The traffic is pretty great too compared to what it's like in the summer. Of course, I always have my camera and Fall sunrises over the ocean and sunsets over Assawoman Bay are the prettiest.

Yesterday a friend and I went to Wilmington Delaware for the afternoon, specifically to go to Joe's Crab Shack. I guess the Joe's commercials on TV are working if they entice me to drive 75 miles for lunch. Joe's is located in the Wilmington Waterfront area which is really nice. They have several restaurants, outlet stores and also the ballpark for the minor league baseball team the Wilmington Blue Rocks. If you have a large lunch, this is a nice place to walk off some calories and look at the seagulls and boats and do a little shopping.

So, as far as my restaurant review - if you ever have a chance to eat at Joe's you should definitely go. It's a quirky looking place that has so much stuff on the walls you can't even see the walls. I had to laugh at the bathrooms - Dudes and Babes. The food is huge. No skimpy portions here. The steampots are delicious with crab legs, potatoes, sausage, clams and corn and come in different flavors with different kinds of crab. Being from Baltimore, I had to have the Old Bay steampot. You have to try the crab nachos. Unbelievable! I also had hush puppies and clam chowder that were equally good. It ended up being a little expensive, over $80.00 for two with tax and tip but you could get away with spending less if you don't try to eat everything on the menu. The way I feel about it though, is if you're going to drive 150 miles round trip to go to lunch, why not splurge a bit.Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-2031920171998627056.post-23591696882021978792011-11-14T16:29:00.007-05:002011-11-21T11:52:38.573-05:00Shenandoah National Park - Skyline Drive VA

It was a beautiful day last Friday for the Veterans Day holiday. Took a trip to the Shenandoah National Park and drove about 40 miles on Skyline Drive. The park had free admission for Veterans Day so no $15.00 fee. It was a little late for fall leaf viewing but there were still some pretty sights. Saw this little deer and a huge buck with antlers. Hoped to see a bear but no luck. This is a reservoir that provides drinking water for the City of Baltimore and most of Baltimore County, Maryland. The dam was constructed in 1914 to increase the municipal water supply. When it was built, an entire town was submerged under it.

It's a great recreational area with lots of hiking paths and picnic tables. When I was a kid, we would ride our bikes there and feed the fish. They had huge carp in the reservoir back then. You also were able to walk right out to the ledge by the water, but that's closed off now. Probably a few people fell in over the years.

On the way there, I stopped at a country store and bought a banana nut muffin for lunch. When I got to the dam I gave some of it to the gulls and the geese. This gull was upset because he didn't get any. Then a goose stuck his beak in the bag, which I had left on the ground, and he got the wrapper. I had to chase him to get the wrapper back. It was a pretty day, felt like Indian summer and I had a great time taking photos and feeding the birds.
My cats get fed twice a day. They know when breakfast happens because they get fed when I get up, which is usually around 8:00am. Sometimes they help wake me up with a paw in the face or a leap onto my stomach, but it's normally around the same time every day. Dinner is a different matter. I always fed them at 6:00pm when I was working because that was the time I usually got home. They knew it was dinner time when I walked through the door. Now that I am retired, I still try to stick with that 6:00 time because it's what they're used to.

A funny thing happened yesterday when daylight savings time ended and the clocks were turned back. My kitty Alexandra started running around the food bowl at 5:00pm...an hour early. But this was actually 6:00pm daylight savings time. So how does she know it's really 6:00pm? I think my cat is actually telling time. Smart kitty! Now if I can just get her to turn all those battery clocks back it would sure save me some time.....Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-2031920171998627056.post-74993953740825581552011-10-31T10:30:00.004-04:002015-10-01T22:50:27.702-04:00Halloween in the 1950's

I grew up in a neighborhood called Baynesville in eastern Baltimore County. This was a pretty large community of brick row houses that was part of the post-World War II expansion from Baltimore City into the suburbs. My parents had a bit of the pioneer spirit, buying their house in 1950 when the whole area was still under construction. This was a great place to grow up as a lot of it was still country with plenty of woods and some small farms with horses nearby. The baby boom was alive and well in our community and in a few years there were four elementary schools within walking distance not including the parochial schools.

Halloween in elementary school was a wonderful day. We would take our costumes to school and after lunch we would all get dressed and have a party in the classroom. If the weather was nice the entire school would go outside for a parade on the playground. Then when the school day ended we would go home and do a little light trick-or-treating until dinner. After dinner the neighborhood would explode with trick-or-treaters, sometimes twenty or more deep at each house. We got huge hauls of candy and even sometimes money. No one worried about poison candy or bad people, everybody just had a great time.

Unless you live in a small town or neighborhood where everyone knows each other, these days most parents would not even consider letting their children go up to unfamiliar houses and take candy from strangers, and for good reason, just read the newspapers or listen to real horror stories on the nightly news. Even though there are families who know each other where I live, no one comes to the door to trick-or-treat. Halloween seems like just another day, not the crazy wonderful holiday of my childhood.

The world of the 1950's was not as idyllic for everyone as some of our politicians today would like us to believe. And the civil rights movement, Vietnam war, Roe vs. Wade and womens' lib would soon change the world forever but for the little baby boomer kids of the 1950's in my neighborhood Halloween was a hugely BIG deal and just about as good as it gets.Unknownnoreply@blogger.com7tag:blogger.com,1999:blog-2031920171998627056.post-65567427780668704882011-10-31T00:45:00.003-04:002015-10-01T22:48:53.715-04:00Pressure Cooker Vegetable SoupThe prematurely cold weather this weekend on the east coast got me thinking about chilly weather comfort food. My mom always made the best veggie soup when I was growing up. One of my favorite childhood memories is mom making a big pot of hot soup for dinner on a cold evening. You have to have a piece of crusty bread with soup but when I was a kid I always ate vegetable soup with buttered saltine crackers. I would dip the cracker into the soup and then the butter would drip all over my hand....messy but so good.

My mom would cook her soup for hours on the stove, but being the modern woman, I use my electric Cook's Essentials pressure cooker from QVC. Love shopping on QVC (but that's another post!). This one is a 6 quart pressure cooker and it has changed my life! The thing is wonderfully fast and I am learning to adapt my recipes so I don't have to spend hours slaving at the hot stove. Soup is one of the easiest things to convert to pressure cooking and the best thing about it is that you don't have to keep opening the pot lid to stir. Clean up is so much faster since there is no splatter all over your stove.

This recipe can also be converted to crab soup by adding a few steamed crab claws, crab meat and Old Bay seasoning to taste.

Pressure Cooker Vegetable Soup

1 medium onion diced
1 lg baking potato diced
16 oz. bag mixed vegetables
1/2 cup barley
3 cups shredded cabbage
1 1/4 lbs. beef stew meat cubed
28 oz. can whole tomatoes
3 oz. tomato paste
2 T beef base (or 2 boullion cubes)
2 whole celery stalks
4 cups water

Cook the onion and beef cubes on the brown setting until the onions are tender. Add the remaining ingredients and water to the fill line (in my cooker this is 4 cups). Close the lid and cook for 10 minutes and wait for cooker to release pressure naturally. Discard the celery stalks before serving.
Enjoy!
